CRISPY ONION RINGS

2 large yellow onions, sliced 1/4 to 1/3 inch thick
2 tsp Serendipity
1 tsp Tony Chachere's Original seasoning
Milk
2 cup all-purpose flour
1 can (12-oz) beer
1 Tbls baking powder
1 tsp sugar
Peanut oil (for frying)

Slice onions, separate rings. In a bowl place onion rings. Cover with milk, soak for 30 minutes. In a bowl sift together flour, baking powder, sugar, Serendipity and Original seasoning. Stir in beer (more beer may be required) until smooth. Set aside. Drain onions. Fry in batches so in a deep fryer get oil to between 375 - 400 degrees F. Dip onions in batter, shake off excess. Fry until golden about 2-3 minutes. Drain on paper towels. Sweet Vidalia, 1029 or large purple onions can be used. Yield: 4 servings
