SNOW’S MEATLOAF
2 lb snow goose meat, chili ground or chopped fine
3 ea large eggs
4 clove garlic, minced
1 ea purple onion, chopped
2 ea tomatoes, peeled, diced
1-1/2 cup Pepper Jack Cheese, grated
1 cup bread crumbs
1/2 cup fresh cilantro, chopped
1/2 cup brown sugar
1/4 cup Dave’s Peppa Royale
2 Tbls Cajun Chef’s Green Hot Sauce
Salt to taste
In a bowl combine all ingredients, mix well. Place mixture in a greased meat loaf pan. Bake at 350 degrees F for 45 minutes. Cook additional 15 minutes or until meat loaf is firm to the touch. Remove and serve warm. Yield: 6-8 servings
