HUNTER'S BISCUITS

2 cup Bisquick baking mix
1/4 tsp salt
2/3 cup buttermilk
2 Tbls butter, divided
2 tsp sugar

In a glass bowl combine Bisquick, sugar and salt. With a fork mix in half the butter. Pour in buttermilk and combine with a fork until smooth. In a microwave proof cup melt remainder of butter, approximately 30 to 45 seconds. Kneed on a floured surface about 30 seconds (about 10 times). Roll out dough about ½ inch thick. Cut out biscuits with a 3-inch biscuit cutter or approximate size cap or drinking glass. Place on an ungreased baking sheet or non-stick airflow-baking sheet. Leave some space between biscuits. DO NOT TOUCH BISCUIT TO BISCUIT. Bake at 400 degrees F for 15 minutes or until biscuits are golden brown. Brush immediately when taken from oven with melted butter. Yield: 8 to 10 biscuits
